Zucchini and Mushroom Omelet for breakfast
Posted on Oct 06, 2008 under Food |I don’t usually share recipes on this blog but would like to post about an easy breakfast that I love to prepare once in a while especially when my hubby asks for a heavy breakfast. Most of the time he would be content with just a cup of coffee and quick to prepare kind of food that’s why every time I make this it’s like a treat or a so-called “special breakfast”.
Zucchini and Mushroom Omelet
Ingredients:
4 large eggs beaten
1 medium size green squash or zucchini halved and thinly sliced
½ cup roughly chopped mushroom
1/4 cup diced red or green bell pepper
1 roughly chopped medium white onion
Extra virgin olive oil
Salt and ground pepper to taste
Procedure:
You have to sauté the onion in olive oil until it becomes translucent then add the pepper followed by the mushroom and green squash for about 5 minutes or until the vegetables are tender. Put salt and pepper to taste or your preferred spices. Put the vegetable mixture aside while you make way for the eggs like you would as omelet which is good for two persons. Then, divide the vegetables into 2 parts for two servings as filling for the omelet. Serve with toast or pancake with strawberry on the side and of course, you hot choco or favorite coffee.
